Chamomile - (Matricaria recutita) was coined by the ancient Greeks as “ the apple of the earth,” and “the sun on the ground”, likely due to its subtle fruity fragrance and lovely yellow daisy-like flowers. Chamomile is a member of the Asteraceae family, growing up to 24” high in temperate climates around the world. The Chamomile we know to be almost synonymous with herbal tea is Matricaria recutita, or German Chamomile. This beloved herb is as ancient as it is mighty, known and used for thousands of years the world over, from the ancient Greeks and early Native Americans to countless households today. It was even found in scrapings of Neanderthal teeth 50,000 years old! Chamomile is a gentle, bitter herb, perfect for keeping digestion humming along and the nervous system calm and relaxed. Chamomile makes a lovely after dinner tea all on its own or paired with peppermint and fennel. It can also stand alone very well as a calming and delicious sleep tea or paired with a bit of lavender.
